The Inspiration: The Grill Workshop
A few weeks ago, I had the pleasure of leading a grill workshop. At the end of the workshop, a juicy rib-eye steak was left over. Instead of just enjoying it, I got the idea to combine it with my second passion for pizza and perfect it in the pizza oven. The result was so good that I absolutely had to share it with you.
The Perfect Equipment: Cast Iron Pan and Pizza Oven
Before we start, we need the right tools. A well-seasoned cast iron pan is essential for preparing the steak perfectly. The pizza oven needs to be preheated to about 420°C to bake the dough crispy and finish the steak at the same time.
Ingredients List
- 1 Rib-eye steak
- 1 Pizza dough ball (Original Neapolitan Pizza Dough)
- Olive oil
- Parmesan shavings
- Balsamic reduction
- Arugula
- Salt and pepper
Step-by-Step Instructions
- Step 1: Preheat the Pizza Oven
Preheat your pizza oven to about 420°C. This high temperature is necessary to bake the dough perfectly in the shortest possible time. - Step 2: Prepare the Cast Iron Pan
Place the empty cast iron pan* in the hot oven for about 10 minutes to heat it thoroughly. Then carefully remove it and place it on a heat-resistant surface. - Step 3: Prepare the Rib-Eye Steak in the Pizza Oven
Place the rib-eye steak in the hot pan and put it back into the oven. Depending on the thickness of the steak, cook for about 4-5 minutes on each side until a core temperature of 54-56°C for medium-rare is reached. Remove the steak and let it rest. - Step 4: Shape the Pizza Dough
Spread the pizza dough ball into a round or rectangular shape. It is not necessary to preserve the air pockets in the dough, as we are making a sandwich. - Step 5: Bake the Pizza Dough
Brush the edges of the dough with olive oil and draw a line of oil in the middle where the dough will be folded. Fold the dough in half and bake it in the pizza oven until evenly browned. Turn the dough if necessary to ensure even browning. - Step 6: Assemble the Sandwich
Once the dough is baked and still warm, open it and fill it with fresh arugula, sliced rib-eye steak, Parmesan shavings, and a drizzle of balsamic reduction. Season to taste with salt and pepper.

Pizza Steak Sandwich
Ingredients
- 1 Stk. Rib-Eye Steak
- 1 Stk Pizzateigling (Original neapolitanischer Pizzateig)
Olivenöl
Parmesanspäne
Balsamico-Reduktion
Rucola
Salz und Pfeffer
Instructions
- Pizzaofen vorheizen: Auf 420°C vorheizen.
- Gusseisenpfanne erhitzen: Leere Pfanne für 10 Minuten in den Ofen stellen.
- Steak zubereiten: Rib-Eye in der heißen Pfanne 4-5 Minuten pro Seite garen, bis medium-rare erreicht ist. Steak ruhen lassen.
- Pizzateig formen: Teig ausbreiten.
- Pizzateig backen: Teig mit Olivenöl bestreichen, falten und im Ofen backen bis er gleichmäßig gebräunt ist.
- Sandwich zusammenstellen: Teig öffnen, mit Rucola, Steakstreifen, Parmesan und Balsamico-Reduktion belegen. Mit Salz und Pfeffer würzen.
